PERUVIAN CHICKEN WITH GREEN SAUCE

 







INGREDIENTS

CHICKEN BREAST

PAPRIKA

10 GM

OREGANO

1 GM

CUMIN POWDER

5 GM

BLACK PEPPER

3 GM

LIME JUICE

5 ML

ABC SAUCE

5 ML

REFINED OIL

20 ML

GARLIC

5 GM

FOR GREEN SAUCE

 

GREEN PEPPER

10 GM

GARLIC

GREEN LETTUCE

10 GM

OLIVE OIL

15 ML

JALAPENO

5 GM

MAYONNAISE

METHOD

Whirl all of the ingredients around in a blender or food processor until smooth. It should look like a thick paste. With your hands, smear the wet rub over the entire chicken breast. Before you pop it in the oven, let the bird sit out at room temperature for about 30 minutes.

Season with salt and roast at 180C cook 15 minutes .Let the chicken rest 5 minutes. After sliced and serve with green sauce.

GREEN SAUCE

Green peppers, Garlic, Green lettuce, Olive oil and Jalapeno blend paste consistency and mix with mayonnaise.
